Easy Vegetable Stir-Fry - Baby & Toddler Recipes

We got home a little late and L was hungry so I had to throw together a quick dinner for her! We had some leftover veggies and rice in the fridge, so I whipped her up a vegetable stir fry. It’s made with four types of veggies, an egg (protein!) and rice (healthy carbs), and is one of those meals that’s just all around nutritious. L absolutely loved it – she ate the whole bowl! We finished off with some raspberries for dessert, followed by bath time and a bottle of milk…and then she slept 12 hours straight 🙂

Easy Vegetable Stir-Fry

Serves: 2 Cooking Time: 15 mins

Ingredients

  • 1tbsp sesame oil
  • 10gr chopped onions (about 1/8 of an onion)
  • 100gr cooked rice
  • 1 egg
  • 25gr canned corn
  • 100gr steamed veggies (I used broccoli, peas and carrots, chopped into small pieces)
  • A pinch of veggie stock
  • Salt & pepper to taste

Instructions

Heat the sesame oil in a frying pan.

Slightly cook the onions until they turn clear.

Add the rice, egg, corn and steamed veggies. Cook and scramble for about 5 minutes until the egg is cooked through.

Sprinkle with veggie stock and salt and pepper (to taste).

Serve to your little!
