Apple foldovers are one my favorite things, ever! When I was a kid we used to get the most delicious apple flaps from Delifrance and they were just heaven! So in memory of that, I whipped up these little apple treats for our brunch and they were a hit with the whole family! They actually tasted really similar – only a little less sweet (which is a good thing, right?) And since they’re so small they’re a perfect finger food for toddlers and weaning bubbas.

I whipped them up in about 20 minutes, and then baked them for another 20. The only thing that takes some time is waiting for the apples to cook – but while they’re steamin’ you can do just about anything else, like tend to a needy toddler, for example.

Serves: 7 pieces Cooking Time: 45 mins


  • 2 apples, cored and sliced (note: the sweeter the apples the better)
  • 1tbsp lemon juice
  • 1tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 egg, whisked
  • 1 puff pastry roll (I used Leisi's 230g low fat dough)



Preheat the oven to 180°C (350F).


Cut the apples into small cubes. Mix with lemon juice, brown sugar and cinnamon.


Transfer to a pot and cook on medium heat, covered, for 20 minutes, until apples are soft. Stir occasionally to make sure the sugar doesn’t stick to the pan.


Meanwhile, roll out your puff pastry, and cut out 7 circles, about 10cm in diameter (4 inches).


Scoop one tablespoon of the apple mixture onto one half of the circle (leave about 2cm space around the edge as that’s where you’ll fold over the pastry).


Put a little bit of egg wash on the edge of the pastry, and fold the circle in half to close the pastry. Close the edges by pressing down the tip of a fork.


Poke 3 slits into the surface to let the steam escape while baking.


Cover the surface with a bit of egg wash, and sprinkle with a pinch of sugar.


Place into the oven for 20 minutes, until golden brown.
