Veggie-Stuffed Pizza Pinwheels

Veggie-Stuffed Pizza Pinwheels - Baby & Toddler Recipes

It’s been such a fun-filled day! The sun’s finally out and spring is in full swing, so we went down to the lake for a long walk and play in the park, followed by lunch at Ikeaaa! Then in the late afternoon L got to play on her scooter with daddy in the back yard while I whipped up some veggie-stuffed pizza swirls.

These pinwheels were not only super easy to make, but L reaally loved them. What she doesn’t know is that I secretly stuffed them with lots of veggies, which  makes them healthier than your standard ham & cheese swirl! She had about 3, followed by a healthy dinner of broccoli, fish and raspberries.

The fun thing with these is that they can be stuffed with just about anything you like. The trick is just to roll the dough up really tight, otherwise they lose their shape as the filling runs out. And if you’re ever out of ideas for dinner party finger foods – they’re a real crowd pleaser!

You’ll find the recipe below – hope you have fun, and love them as much as we do!

Serves: 18 pinwheels Cooking Time: 30 mins

  • 150gr broccoli
  • 25 zucchini
  • 25gr grilled or raw bell peppers
  • 50gr broccoli, steamed
  • 100gr marinara sauce
  • 75gr mozzarella cheese
  • 1 puff pastry roll (I used Leisi's 230g low fat dough)

Preheat the oven to 180°C (350°F).

Dice the vegetables into very small pieces, and stir them together in a bowl.

Roll open the puff pastry dough and let it set to room temperature.

Spread the marinara sauce over the pastry (spread evenly).

Cover with the vegetables and mozarella cheese (also spread evenly).

Roll the pastry up as tight as possible, into a long roll.

Carefully cut it into small slices (about 3-4cm or 1.5 inches thick).

Place them on a baking sheet, and slide into the oven for about 20 minutes, until golden brown.

Let them cool and enjoy!
