Tofu & Broccoli Alfredo (Low Fat)

Tofu & Broccoli Alfredo (Low Fat) - Baby & Toddler Recipe

For lunch today I went with a simple pasta recipe that’s delicious and not too sinful – tofu & broccoli alfredo. The recipe calls for only a little bit of cream and cheese, and for the rest uses low-fat and wholesome ingredients. To make the pasta slightly healthier I also decided to opt for wholegrain pasta spirals, and instead of meat we went with tofu, as L’s been having quite a bit of meat and fish lately. But the tofu can easily be substituted for grilled chicken cubes – whatever your little one prefers!

We made this as a family dish, and it served 2 adults + 1 toddler, with enough leftovers for another toddler meal (freezer meal, yes!)

Recipe’s below, I hope you enjoy it!

Serves: 4 Cooking Time: 20 mins

  • 300gr pasta
  • 250gr tofu/chicken
  • Seasoning
  • 250gr broccoli
  • 300ml low-fat milk
  • 20ml cream
  • 1 tbsp flour
  • 1tsp vegetable stock
  • 75gr low-fat cream cheese
  • 30gr parmesan cheese

In one pot, boil the pasta until tender (don't forget a little salt + olive oil). In the last 3 minutes of cooking, you can add the broccoli so that it can steam along.

Cut the tofu into small cubes. Sprinkle them with seasoning (we used Aromat), and cook them on a grill pan for about 7-10 minutes, flipping them occasionally so they're cooked on all sides.

For the alfredo sauce - heat the milk and cream in a pan.

Add the flour and vegetable stock, and stir on low heat until the sauce thickens. Add the cream cheese and parmesan cheese and remove from heat.

In a large bowl or pot, mix the pasta, broccoli, tofu and alfredo sauce.

Let it cool, sprinkle with some cheese, and enjoy!

This version is quite low in salt as it's friendly for toddlers and babies as of 1 year old. For an adult version, feel free to add a little more stock, cheese and salt for extra flavor.
