Veggie Mac ‘n’ Cheese

Veggie Mac 'n' Cheese - Baby Food Recipe

Today’s recipe is honors one of our favorite types of dishes – comfort food! Having lived in the States, I picked up a love for mac ‘n’ cheese. It became my ultimate comfort food. And not just any mac ‘n’ cheese, the unhealthiest of all – Kraft’s. After I moved, I was forced to withdraw from my addiction, and that’s when I realized just how unhealthy the stuff is: processed, super high in sodium and it doesn’t even contain any real cheese!

Since then, when I’m really craving some good ole’ mac ‘n’ cheese, I’ll make a homemade version, which is a whole lot healthier as it uses blended veggies as a base, and has just a tad of cheese added to it. After a bit of trial and error, I found that squash puree delivers the creamiest texture compared to other veggies, with a plus in that also looks a lot like melted cheese. And that, mixed with some broccoli, milk and cheese, makes the perfect substitute sauce for adults but also littles. Honestly, it doesn’t even taste (or look) like you’re hiding veggies in there.

The recipe’s below, hope you enjoy!
